In the summer, of 2000 Irma and Tim Elser, moved their son and two daughters from Houston to Belton to make it their new home. They went on to open Bell County Carpet Cleaning that same year, Bell County Flooring in 2006, as well as several other ventures around Belton.

In 2013 Christina Castro (Formerly Elser) their youngest,  graduated from Belton High School. After completing the High School's CTE program for Culinary Arts Christina continued to further her education by attending Le Cordon Bleu and graduating in 2014 with a Baking and Patisserie Certification. In 2015 Irma and Christina decided to open Sweet Confections Cafe in Grothway Square in Belton.

Alex and Christina Castro were married in 2018 and then two months later moved into their brand new location off of Highway 317.  It was then they turned the family business into Sweet Confections Cafe & Bakery and were able to celebrate 4 years of being in business.
